&lt;li&gt;Only use potato peels that were thoroughly washed prior to peeling. In a large bowl, whisk together canola oil, parmesan, salt, and pepper. Add potato peels (only use peels from potatoes that were thoroughly washed) and toss until evenly coated.&lt;/li&gt;
