Slow Cooker Vegan Black Bean Pumpkin Chili

Ingredients: Makes 12 servings

3  15oz cans Black Beans, Canned, Drained
2 14.5oz cans Diced Tomatoes, Canned, No Salt Added
1 cup Canned Pure Pumpkin
1 medium Yellow Onion, Diced
1 TBSP Chili Powder
1/2 tsp Fresh Ground Black Pepper
1 tsp Cumin
1/4 tsp Nutmeg 
1/8 tsp Cloves, Ground
1/2 Kosher Salt
1 tsp Cinnamon

Directions:

  1. Add all ingredients to a 4-quart or larger slow cooker. Stir.
  2. Cook on low for 8-10 hours.
  3. Serve with assorted toppings of your choice: avocado, cherry tomatoes, chopped scallions or onion, cilantro, hot sauce or, if not vegan, shredded cheddar or jack cheese and sour cream.
