Apple Squares with Peanut Butter Glaze

Ingredients: Makes 16 servings

3/4 cup All-purpose Flour
1 tsp ground Cinnamon
3/4 tsp Baking Powder
1/2 tsp salt
4 TBSP unsalted Butter, at room temperature
1/2 cup (packed) light Brown Sugar
1 large Egg
3/4 cup unsweetened Applesauce
1 tsp Vanilla extract
1 cup grated peeled Honeycrisp apple
1/2 cup powdered Peanut Butter
4 tsp Powdered Sugar
Cooking Spray

Directions:

  1. Preheat the oven to 350°F. Coat an 8-inch square baking pan with cooking spray.
  2. Whisk the flour, cinnamon, baking powder, and salt. Using an electric mixer, separately beat the butter and brown sugar until combined and creamy. Beat in the egg, applesauce, and vanilla until combined. Gently fold in the flour with a spatula. Fold in the grated apple. Spread the batter into the pan. Bake for 20 to 23 minutes, then let it cool in the pan.
  3. Whish the powdered peanut butter and powdered sugar. Add 1/4 cup water and stir to combine. Add 1 tsp water and stir until the glaze is thick but spreadable. Transfer to a plastic bag and chill in the refrigerator for 30 minutes.
  4. When the cake and glaze have chilled, remove the cake from the pan and snip a small hole off 1 bottom corner of the bag, then pipe the glaze across the cake. Cut into 16 squares. Store at room temperature for 1 day or in the refrigerator for up to 5 days.
