No-Bake Energy Bites

Ingredients: Makes 15 servings

1/2 cup sunflower seed butter (sunbutter)
1/4 cup semi-sweet chocolate chips
1/4 cup brown sugar
1/4 cup honey
1/4 cup hulled pumpkin seeds (pepitas)
1/2 cup dried cranberries
1/2 cup old fashioned oats
3/4 ounce puffed brown rice

Directions:

  1. Melt sunbutter, chocolate chips, brown sugar and honey in a large microwave-safe bowl. Stir every 10-15 seconds to keep from burning.
  2. Add pepitas, cranberries, oats, and puffed rice and stir until evening mixed. Roll into 15 balls about 1-inch in diameter.
