Ingredients: Makes 8 servings
1 lb. extra-lean ground Turkey breast
1/2 cup seasoned Italian breadcrumbs
1/4 cup grated Parmesan
1 large Egg
1 1/2 tsp Italian seasoning
2 tsp kosher Salt
2 10-inch loaves Italian bread (about 20 oz.)
24 oz. Tomato sauce
1/2 cup shredded part-skim Mozzarella
Cooking spray
Directions:
- Place the oven racks in the top third of the oven, preheat to 350ºF. Line 2 baking sheets with parchment paper or foil that's been coated with cooking spray.
- In a large bowl, combine the turkey, breadcrumbs, Parmesan, egg, Italian seasoning, and salt. Using a tablespoon to scoop out the turkey mixture, gently shape into a small meatball and place on the prepared baking sheet; repeat with the remaining turkey mixture to make 32 meatballs. Bake, shaking the pans every 5 minutes to promote even browning, 10 to 15 minutes.
- While the meatballs are cooking, slice each loaf of bread into 4 equal pieces.
- When the meatballs are done, remove from the backing sheets. Place the bread on the same baking sheets; top each with 4 meatballs. Spoon about 3 tablespoons sauce over the meatballs in each sandwich; top each with 1 tablespoon mozzarella. Bake until the cheese is melted and the sandwiches are heated through, 5 to 7 minutes.
